One of my accepted ways of celebrating whatever vegetable is in season is by turning it into pakoras. Cooking them like a flash permits the vegetable to narrate, and a easy pakora batter is gentle enough to let spring onions and spinach possess correct that. Spring onion and spinach pakoras

1 bunch coriander, roughly chopped
2 garlic cloves, peeled and roughly chopped
30g peanuts, or almonds
1 tsp caster sugar
Juice of 1 lemon
2 inexperienced chillies, finely chopped (rob away the pith and seeds at the same time as you’d treasure much less warmth)

First get the chutney. Save the coriander, garlic, nuts, caster sugar and lemon juice in a blender. Add half of the chopped chillies, season generously, then blitz unruffled; if need be, add a tablespoon of water to loosen. Problem into a runt bowl.
Save the spring onions, spinach, closing chopped chilli, grated ginger, turmeric and garam masala in a natty bowl. Add a teaspoon of sea salt and mix neatly. Hump within the flour, then slowly waddle in seven to nine tablespoons of water, till the batter correct comes together but is quiet thick. Space aside whereas you warmth the oil.
Pour the oil into a natty saucepan and set aside it on a medium-high warmth.
